Chickpea and Avocado Toast

This is a great recipe that gives you all the protein, healthy fats and nutrients needed to maximize your day’s potential. You will literally feel your energy levels being boosted with every bite. It’s a simple recipe that can be made ahead of time to reduce the prep time when you are in a rush.

Ingredients:

Chickpeas, Avocado,Bread, fresh garden tomatoes, fresh white onions, panko crumbs, fresh garlic, cumin, pepper, sea salt, olive oil, fresh lemon, red wine vinegar.

(2 servings recipe)

  • 🌿 1.5 cups chickpeas
  • 🌿 2 avaocados (fresh)
  • 🌿 two fresh garden tomatoes or ten fresh garden cherry tomatoes
  • 🌿 half a medium sized onion
  • 🌿 ½ cup of panko crumbs
  • 🌿 3 cloves garlic (fresh)
  • 🌿 1 teaspoon cumin
  • 🌿 pepper to taste
  • 🌿 sea salt to taste
  • 🌿 2 tablespoons of olive oil
  • 🌿 2 tablespoons of red wine vinegar
  • 🌿 half a lemon juice squeezed (fresh)
  • 🌿 Your favourite bread (rye, sourdough etc)

Directions:

  • 🌿 mix chickpeas and avocados in a large bowl until mixed into a chunk spreadable paste
  • 🌿 add onion, garlic, cumin, pepper, salt, olive oil and red wine vinegar
  • 🌿 spread mixture on your favourite toasted bread
  • 🌿 squeeze fresh lemon juice on top
  • 🌿 garnish with fresh tomato slices or halved fresh cherry tomatoes
  • 🌿 sprinkle the panko crums on top
