Cabbage Chickpea and Chicken Salad

This recipe gives you both plant based and animal proteins as options to maximize your health potential. It’s a great option to make ahead of time and will keep for several days in the fridge to use when you are in a rush and want a yummy meal.

Ingredients:

Chicken breast, Red and Green Raw Cabbage, Spinach, Chickpeas, Avocado, Fresh garden tomatoes, Fresh garlic, Cumin, Pepper, Sea salt, Olive oil, Balkan style plain yogurt, Low fat mayo.

(2 servings recipe)

  • 🌿 1.5 cups chickpeas
  • 🌿 2 avaocados (fresh)
  • 🌿 two fresh garden tomatoes or ten fresh garden cherry tomatoes
  • 🌿 2 Chicken breasts
  • 🌿 3 cloves finely chopped garlic (fresh)
  • 🌿 1 teaspoon cumin
  • 🌿 pepper to taste
  • 🌿 sea salt to taste
  • 🌿 2 tablespoons of olive oil
  • 🌿 half a lemon juice squeezed (fresh)
  • 🌿 ¾ cup Balkan style yogurt
  • 🌿 ¼ cup Low fat mayo

Salad Dressing:

Directions:

  • 🌿 mix spinach, chickpeas, cabbage, tomatoes and avocados in a large bowl 
  • 🌿 add finely chopped garlic, cumin, pepper, salt, salad Intergalactic Sauces dressing and mix (put to the side)
  • 🌿 mix yogurt, olive oil and mayo with cumin, salt, pepper, lemon and fresh garlic
  • 🌿 marinate chicken breast for an hour or overnight for deeper flavours
  • 🌿 bbq chicken to desired tenderness
  • 🌿 plate the salad with chicken breast sliced on the side
